Guest Chef Night with Chef Grayson Pilar of MariPili Tapas Bar

Please join us as we welcome Chef Grayson Pilar of MariPili Tapas Bar for a special evening as we celebrate our students, build community and enjoy an incredible meal. Guest Chef Night pairs premier local chefs with FareStart students to create a three-course meal served by volunteers. All revenue and donations from Guest Chef Night support FareStart’s job training programs.

Chef Grayson learned to cook from her abuela and seeks to bring her nostalgia surrounding Spanish cuisine to the table to share with friends and family. She has studied food in Spain and worked an internship at Galicia’s only 2-star Michelin restaurant. Chef Grayson named her restaurant after her aunt, MariPili.

Chef Grayson was nominated for “Best Chef: Northwest and Pacific” in 2024 by the James Beard Foundation.

First Course: Stuffed Piquillo Peppers

Roasted vegetables and bomba rice topped with Spanish goat cheese bechamel

Main: Glazed Pork Cheek

Carrillera Gallego (based on Caldo Gallego), braised turnip greens with house-cured pork shoulder and chorizo, white bean and turnip puree, crispy alliums

Dessert: Chestnut Cake

El Par Perfecto (Abuelo’s favorite pairing) with apple whip, crispy apple, chestnut cream
