Guest Chef Night with Chef Paolo Campbell of The Chicken Supply

Please join us as we welcome Chef Paolo Campbell of The Chicken Supply for a special evening as we celebrate our students, build community and enjoy an incredible meal. Guest Chef Night pairs premier local chefs with FareStart students to create a three-course meal served by volunteer community members. All revenue and donations from Guest Chef Night support FareStart’s job training and placement programs.

Chef Paolo Campbell Chef Paolo is a graduate of the Seattle Central Culinary Academy and has cooked alongside many chefs on his culinary journey, with the most recent being under the tutelage of good friend Mark Schroder from Opus Co. If you ask Chef Paolo and his friends and family, he’s only had one dream since culinary school and that was to open a fried chicken restaurant. In 2021 that dream became a reality, and The Chicken Supply has been held in high regard as one of the best restaurants in Seattle ever since.

First Course: Tomato Salad

Marinated tomato, soft egg, long bean, smoked onion vinaigrette

Main: Chicken Inasal Skewers

Grilled annatto-marinated thigh, rice noodle with chayote and pickled peppers, patis, lime

Dessert: Suman

Sticky rice steamed in banana leaf, dipping Tsokolat, toasted coconut sugar
