Inspired and on a mission to get closer to food and the agricultural community, Chef Brendan opened Hitchcock on Bainbridge Island in 2010. Both chef and restaurant earned numerous awards for the micro-seasonal approach to food. Hitchcock features local produce, seafood and meat. Chef McGill continues to grow his repertoire with Hitchcock Deli, Verjus, Bruciato and Cafe Hitchcock. He also raises his own pigs on Shady Acres Farms.
