Bio

Chef Aaron Willis is a cookbook collector and a Certified Sommelier. He honed his skills at the Summit House Restaurant at Crystal Mountain, Ciudad in Seattle and abroad in Berlin and Bali. He is passionate about the bounty of the Pacific Northwest and dishes inspired by cultures from around the globe.

FIRST COURSE

“Gado Gado” 

Mix of Seasonal Vegetable from Alvarez Farms, blanched, steamed or boiled to perfection and served with lontong, peanut sauce and garlic crisps.

ENTREE

“Ayam Betutu”

Draper Valley Chickens stuffed with Balinese Spices, leafy greens and wrapped in banana leaf. Cooked over a charcoal grill and served with yellow rice, leafy green vegetable and spicy sambal on the side.

Vegetarian option will be served Balinese Spice Marinated Tofu, cooked on the grill. 

 

DESSERT

“Rujak” and “Bolu Kukus Pandan”

Spice driven palm sugar sauce served over fresh tropical fruit with pandan cake, coconut cream and toasted coconut.
