Bio

An engineer with the heart of a chef, or vice-versa, Filippo grew up in a small town in Tuscany, Italy. He studied engineering at the University of Pisa, McMaster University, and Tsinghua University, where he obtained his Ph.D. in 2016. His passion for cooking led him through several culinary jobs in Italy and China through the years, including participating on a culinary talk show on Chinese television in the role of Italian resident chef! Filippo is Due’ Cucina Italiana's executive chef.

Beef tongue, oxtail and beef cheek slow-cooked with tomato confit finished with rosemary garlic oil

tagliatelle with kale pesto and roasted asparagus

pesto made with Lacinato kale, walnut, almond, garlic, 24 month aged Parmigiano Reggiano and extra virgin olive oil
